Ingredients

• 1 táami berry
• 1 Canned Salmon (14.75 oz)
• 1 Egg
• 1/2 Tsp Ground black pepper
• 1/4 Cup Crushed saltine crackers
• 1 Tbsp Dijon mustard
• 1 Tbsp Dried parsley
• Juice of one lemon
• 2 Tbsp Margarine
• 1 Tsp Fresh parsley, chopped

Instructions

1. In a medium bowl, combine all patty ingredients together. Divide into 4 equal servings. Shape into 1/4-inch thick patties.
2. Coat a large nonstick skillet with cooking spray. Cook patties over medium heat approximately 5 minutes on each side or until golden brown.
3. To prepare sauce, combine lemon juice, margarine, and parsley in a saucepan and simmer 5 minutes.
4. Serve 2 teaspoons sauce over each salmon patty

• 2 large Grannie Smith Apples, cored and chopped

Instructions

1. In a large bowl, put pineapple and lemon juice.

• 4 Hard-boiled eggs (see Tip), grated through the large holes of a box grater
• 1/4 Cup Fresh corn kernels
• 2 Heads Belgian endive, trimmed and leaves separated
• Freshly ground pepper to taste

Instructions

1. Whisk lemon zest, lemon juice, oil and salt in a large bowl.
2. Add watercress, egg and corn; toss to combine.
3. To serve, arrange about 6 endive leaves on each salad plate in the shape of a star and top with about 1 cup of the salad.
4. Season with pepper.

TIP: To hard-boil eggs: Place eggs in a single layer in a saucepan; cover with water. Bring to a simmer over medium-high heat. Reduce heat to low and cook at the barest simmer for 10 minutes. Remove from heat, pour out hot water and cover the eggs with ice-cold water. Let stand until cool enough to handle before peeling.

• 2 Cups Shredded Cheddar cheese
• 1 Cup Ricotta Cheese
• 1 Egg, lightly beaten
• 2 Cups Freshly Squeezed Orange Juice
• 1 Tsp Almond Extract
• 6 Large Granny Smith Apples Peeled, Cored and Processed
• 6 Tbsp All-purpose flour
• ¼ Cup Uncooked Quick Cooking Oats
• ½ Tsp Ground Cinnamon
• 1 Cup Low Fat Sour Cream
• 1/3 Cup Lemon Juice
• Dash Ground Nutmeg

Instructions

1. Cook lasagna noodles according to package directions. Drain in colander.
2. Preheat oven to 350°F. Grease 13X9-inch baking pan.
3. Combine Cheddar cheese, ricotta cheese, egg, orange juice and almond extract in medium bowl; blend well.
4. Spread 3 apples over the bottom layer. Layer half the noodles over apples, then spread cheese mixture over noodles. Top with remaining noodles, then remaining apple.
5. Combine flour, 1 cup orange juice, oats, cinnamon and nutmeg in small bowl. Cut in margarine until crumbly. Sprinkle over apple.
6. Bake lasagna 45 minutes. Cool 15 minutes.
7. Meanwhile, prepare garnish by blending low fat sour cream and lemon juice in small bowl until smooth. Cover; refrigerate.
8. To serve, cut lasagna into squares and garnish with sour cream mixture.
9. Serve taami berry 5 minutes before lasagna
